Sweet potatoes with spicy chickpeas and tzatziki
3 large sweet potatoes
1 can of chickpeas
1 can of tomatoes
½ tsp turmeric
½ tsp chilli flakes
½ tsp oregano
Heat the oven to 180 degrees C.
Wash and halve the sweet potatoes, with a sharp knife slightly cut the surface of the potatoes (they will bake quicker), add salt, pepper, a little olive oil and smoked paprika.
Place on a baking tray and pop into the oven for 20-25 minutes.
In the meantime, drain the chickpeas and rinse them well in cold water. Dice the onion, fry it for 2-3 minutes, then add the chickpeas and spices, simmer for a while and then add the tomatoes. Cover and cook for about 5 minutes.
Remove the potatoes from the oven. With a spoon fluff the potato inside its skin. Spoon the chickpeas and tzatziki on top of the baked and fluffed sweet potato.
This is our favourite dish, it’s quick, healthy and damn tasty.
