Power balls

Ingredients:

¾ cup sunflower seeds

¾ cup pumpkin seeds

Handful of coconut flakes

2 heaped tbsp. coconut oil

Handful of hemp seeds

Handful of goji berries

2 tbsp dark cocoa powder

8 large soft dates (Medjool dates)

Juice of ½ orange (optional)

water

½ scoop vegan protein powder, wild berries flavour

Method:

Roast the seeds in a frying pan for about 5-8 minutes (be careful not to burn them). Pour roasted seeds into the food processor, add coconut flakes and goji berries, finely blend. Add dates (watch out for the stones) and the rest of the ingredients. If you’ve decided to skip orange juice from your recipe, now is the time to add a bit of water. Turn on your food processor and blend the ingredients well, if you decide you need more water, make sure to add only a little at a time.

The consistency is supposed to be thick and sticky but you should still be able to form it into balls. Cover your hands with a little coconut oil and roll little balls.

Store in the refrigerator (up to 7 days).
