250g sesame – organic is best
1-2 tbsp tahini
60ml honey – organic is best; if you like your halva sweeter, you can add more honey
1 tsp good quality vanilla essence
Handful of pistachios (crushed in a mortar)
Roast the sesame slightly on a dry frying pan, be careful not to burn it or your halva will be bitter in taste. Place the cooled sesame in a blender and blend at high speed into smooth paste – about 10 minutes.
To prevent blender from overheating you can switch your blender off in every 2-3 minutes.
Add tahini, vanilla and honey to the sesame paste and blend some more until all ingredients are combined. Line a deep dish with cling film, tip the halva out of the blender into the dish, sprinkle the top with crushed pistachios, put in the fridge e voila! Enjoy
