Delicious chickpeas balls

Ingredients:

1 can of chickpeas

Handful of roasted sunflower or pumpkin seeds (you can skip this step but the seeds will give the balls nicer texture)

2 tbsp sunflower butter (you can use any other nut butter instead)

1 tbsp hemp seeds (optional)

4-5 tbsp healthy sweetener – I used coconut nectar but agave or maple syrup will taste awesome too

½ vanilla stick or good quality vanilla essence

1 dark chocolate

Coconut oil

Coconut flour

Method:

Drain and rinse the chickpeas in cold water, set aside in a bowl. Lightly chop the seeds in the food processor, to a crunchy texture. Move to a bowl. Blitz the chickpeas until smooth, add sunflower butter, sweetener, hemp seeds and vanilla (open the vanilla stick with a sharp knife and remove the seeds). Blend until all ingredients are well combined. Finally add the chopped seeds (save 1 tsp for sprinkling).

If the dough is too sticky to form balls, you can add a bit of coconut flour, add about 1 tbsp coconut flour and work it with your hands. Next, cover your hands lightly with a bit of coconut oil and form small balls from the dough, place them on parchment paper.

Melt the chocolate in a pot, add 1 tbsp of coconut oil. Using a fork, dip the balls in the chocolate and place on parchment paper. Finally, sprinkle them with the saved chopped seeds.
