Courgette latkes (pancakes)



1 cup chickpea flour

½ tsp turmeric

1/4 tsp ground smoked paprika

1 tsp baking powder

1 garlic clove

1  courgette

½ cup water

Salt, pepper to taste


Grate the courgette thickly, you don’t need to peel it. Add pressed garlic clove and spices and set aside. Add baking powder to the flour and slowly pour in water mixing it thoroughly with a fork to prevent flour pockets forming. Add grated courgette to the batter and fold in until incorporated. On a hot (non-stick) frying pan pour 4 small cakes using a ladle. Fry them until you see bubbles forming on the top, then turn them and fry a bit more. Ready!


If your frying pan is a truly non-stick good quality pan, there is no need to use any fat for frying. However, if you know it will stick, you can grease it slightly with coconut oil. Place fried cakes on a cooling rack.
