Chocolate brownie



  • 170g Buckwheat flour
  • 60g cocoa powder
  • 300g cooked sweet potatoes
  • 10g dates – large and soft
  • 120ml liquid coconut oil
  • 1 tsp xantham guar
  • ¼ tsp salt
  • 100g coconut sugar
  • 1 tsp vanilla extract


Preheat the oven to 170 degrees Celsius. Cook sweet potatoes until soft, place them in a blender, add dates and a bit of water if needed. Blend. When potatoes and dates are smooth, add coconut oil and pulse on low speed. Don’t over mix because the oil will start setting. In another bowl mix all the dry ingredients, add the potato & date mixture and stir carefully with a silicone spatula. Bake for approx. 30 minutes or until inserted skewer comes out clean. Enjoy!
