Brown rice with coconut milk and mango puree



  • 1 cup coconut milk – organic is best
  • ½ cup brown rice
  • ¼ cup slightly roasted coconut flakes
  • 1 very ripe mango – organic is best
  • ½ tsp vanilla paste


Cook the rice in the coconut milk with the vanilla paste. Peel the mango and blend it to a puree. Pour mango puree on top of cooked rice, sprinkle with roasted coconut flakes. Enjoy!
