Brown rice with coconut milk and mango puree

- 1 cup coconut milk – organic is best
- ½ cup brown rice
- ¼ cup slightly roasted coconut flakes
- 1 very ripe mango – organic is best
- ½ tsp vanilla paste
Cook the rice in the coconut milk with the vanilla paste. Peel the mango and blend it to a puree. Pour mango puree on top of cooked rice, sprinkle with roasted coconut flakes. Enjoy!
